The following recipe not only re-invents the classic two-piece combination with the other ingredient, but also manages to bring everything together in a really decorative way onto the dining table.

For that you need:

For the potato sauce:

-80 g of floury, boiled potatoes
-2 egg yolks
-40 g soft butter
-30 ml of cream
-Salt pepper
-2 beaten egg whites

For covering:

-50 g butter
-1 diced onion
-600 g of fresh spinach
-1 finely chopped garlic clove
-Salt pepper
-a pinch of grated nutmeg
-30 ml of cream
-3 egg yolks
-2 beaten egg whites
-75 g of flour

For covering:

-300 g cream cheese

-200 g smoked salmon in slices

That is how it goes:

1.) Put the potatoes together with the egg yolks, the butter, the cream and the spices in a bowl and crush the potatoes with a fork. Beat the whole mixture with the fork to make the sauce as smooth as possible.

Then pick up the egg whites and pour the cream into a spout.

2) Now spray the potato cream in strips onto a baking tray covered with baking paper so that a pattern is created as in the picture below.

3) Now take care of the spinach: For this, you dissolve the butter in a pan and sweat the onion with the garlic in it. Then allow the spinach to thicken and season with salt, pepper and nutmeg.

Now put the spinach in a high bowl and add the cream and the yolk. Purée the mixture with a blender, add the egg whites and strain the flour. Then stir everything until a uniform cream is produced.

4) Now spread the spinach cream on the potato sauce pattern and smooth it with a spatula. Keep a narrow edge so that the ends of the pattern protrude slightly below the spinach.

Then the whole thing for 20 minutes at 200 ° C top and bottom heat in the preheated oven.

5) After you have taken the sheet out of the oven, you plunge the patterned spinach plate on a clean dishcloth. Then dip another dishcloth in cold water, wring it out and put it on the plate for 30 minutes to cool. Then turn them over using both towels.

6) Now spread the cream cheese on the spinach and smooth it. Again leave a narrow margin. Then you cover the surface with the salmon.

Using the kitchen towel, evenly roll the plate with the topping and then cool it before serving.
